Entering the Zone

Today's recipe: Berry Bowl

It's post holidays and back on the meal plan of meat and veggies, nuts and seeds, some fruit, little starch, and no sugar.  I usually just eat meat and veggies and lots of healthy fats: omega-3 fish oil, pastured butter, olive oil, and coconut oil.  Over the holidays, some ice cream and gluten-free treats crept in and it was surprising how little it took to completely override my taste buds.  When I am "on the plan," I crave nothing but meat and fat and fatty meat.  When I am "off the plan," sugar supersedes my love of meat and fat and I go hog wild for chocolate and gluten-free fudge cookies or flourless chocolate tortes crumbled into vanilla ice cream.  I know I am on the dark side when I wander the sweets aisle lusting after every forbidden delight.

So now I'm back on track and I've found a great way to get my taste buds back on track in a healthy way.  If I crave sugar, I'll give myself sugar the healthy way: Fruit!  There is nothing so divine as a steaming bowl full of blueberries and coconut milk, sprinkled liberally with Ceylon cinnamon of course! (what don't I put cinnamon on?)

My CrossFit gym is embarking on a new event for a new year: two weeks of weighing and measuring, Zone-style starting this weekend.  For more details on the Zone, check out founder Barry Sear's site: http://www.zonediet.com/).  Basically you categorize foods as either proteins, fats, or carbohydrates (or some combos) based on their highest macronutrient.  Then you try to balance your protein, fat, and carbohydrate at every meal and eat only enough to support your lean body mass.








 Now I've been on the Zone and it has worked great--I was even a gym winner in the Zone improvement challenge years ago.  But then I found the Paleo Diet and became lax on the weighing and measuring and proportioning side of my diet.  I still weigh and measure almost all of my meat on a daily basis so that I don't often indulge knowingly in over 12 blocks.  But I have definitely been slacking in the other areas, lower in carbohydrate and higher in fat.


So here is my challenge: I am going to embark on Paleo-Zone at least for two weeks.  Unfortunately, my last Zone foray was before Paleo-style, so many of my old recipes included grains.  Since I can't fall back on them, this is a fresh new start.

I know I have been splurging a little in the fat department if only a 1/3 of a teaspoon of butter is a block.  Just a little splurging ;)  I also haven't been eating much in the way of carbohydrates according to the Zone.  Right now I fill the skillet with kale and chard in the morning, have a whole container full of arugula or spinach or both for lunch and often have broccoli or cauliflower for dinner, but this is a drop in the bucket for the Zone.  One block of cooked kale is 2 cups.  One block of arugula is 10 cups. One block of cooked broccoli is 3 cups.  So I think if I am going to give this challenge a good try, I have to start eating the other forgotten parts of my prescription: little fruit and some starch.  I'll stick with vegetable-based starches (plantains and root veggies sound enticing) and low glycemic fruits (like berries and apples) as much as possible to get in some more blocks without having to eat 10 cups of greens for every block :)

So my recipe today can be Zoned.  I tried it out with a rotisserie chicken from New Leaf market as my protein (1oz per block), frozen blueberries (1/2 cup per block), and coconut milk (about 1T per block*).  I had my protein SLOWLY to make it last longer before my berry bowl and then enjoyed my berries as if a dessert.  The fat makes it satisfying and the sweet hits your sweet-tooth on the spot.  Delicious!

Berry Bowl
Sweet enough to drown your craving for sugar, rich enough to keep you satisfied after you lick the bowl. 
Preparation: 5min using a microwave, probably less than 10min for stove-top

Ingredients:
Organic frozen (or fresh) blueberries, 1/2 cup per block
Organic coconut milk (preservative free if possible, read those labels closely!), about 1T per block*
Ceylon cinnamon (for more on why it should be Ceylon instead of regular, old Cassia, see this post: Apple of My Eye), free on the Zone diet (yay!)

Method:
Measure your desired blockage of blueberries and place them in a microwave-safe bowl (read: NOT plastic) or small pot or skillet to heat on the stove.  Sprinkle on the cinnamon.



Heat the berries until hot but not mush (1-2min in the microwave if you are going that route, depending upon quantity and microwave).  When they're hot, measure and add your coconut milk (alternatively, you could add it before heating, but I like it thicker like after refrigeration instead of thin like it gets after heating).  Stir, taste, and add more cinnamon if desired and I ALWAYS desire :)  Enjoy a healthy, seems-like-an-indulgence-but-isn't bowl!

*My brand of coconut milk has 14g of fat for a 1/3 cup, so if I take 3g of fat per block, that's about 4.6 blocks in that 1/3 cup.  Since 1/3 cup is about 5.3 tablespoons, that means one block is just over a tablespoon (assuming my horrendous math skills are correct).  I take that as a green light to be a little bit more liberal in my tablespoon measurement.  But of course, the consistency of the coconut milk would make a difference too: after refrigeration it's thick, but a fresh can might be watery.  Brands vary too.  Therefore, be your own Zone judge.  The bigger picture is just to be mindful of what you are eating :)

Breakfast: Cinnamon, Smoked Salmon Kale and Eggs

Cinnamon, Smoked Salmon Kale and Eggs

Breakfast worth licking the plate over.  Have you had that in awhile?  Well, here is my answer to the "You can eat eggs every day?" question: Yes.  Yes, I can.  Because they are that damned good.  And I can change them up in an infinite number of ways if I grow bored.  But I haven't yet.

Today's recipe comes from the advice of my acupuncturist to eat more dark, leafy greens to "build my blood." Whether that makes sense or not, dark, leafy greens are unquestionably good for you and nourishing, so I take that advice and run with it.  I'm on a low-carb, paleo-style diet, so it's mostly meat and veggies for me.  This breakfast fits perfectly into my life and I love it.

Why Breakfast? 

Why am I focusing on breakfast with the Holiday Season so plastered on every available venue online and abound? Because it is the simplest way to start your day right and set up your body, especially your  blood sugar, for a day that might not be as "on the diet" as you hope.  Tis the season for indulgence and this breakfast will taste like an indulgence without actually being one, which leaves more room for real indulgences worth the cheat later on.

Some others who follow a similar diet might point to intermittent fasting as a great way to start a day, indulgence later or not, and that's also valid for some.  But for me, personally, my blood sugar is temperamental and I hit low, lows if I skip breakfast.  It's so much so that I can't help but overeat for at least the rest of that day, if not a few days.  Therefore, breakfast is key, at least for me.  My advice is if you are going to eat breakfast: start your day on the right foot with nourishment as your fuel!

Why Cinnamon?

I'm addicted to cinnamon, that's why ;)  Truth be told, Ceylon Cinnamon is a more subtle, fruitier cinnamon that doesn't pose the same over-dose warnings as Cassia based cinnamon (the most common cinnamon you can find, regretfully).  Read my last treatise on the topic here: Apple of My Eye.  I found my Ceylon Cinnamon through mail order from The Spice House and just love it.  

It's hard to say if  Ceylon Cinnamon has the same benefits as Cassia-based cinnamon, but here is the World's Healthiest Food's rundown on cinnamon.  I specifically like the anti-microbial properties and blood sugar moderation.  

For this recipe, Ceylon Cinnamon just adds a great flavor that catches the sweetness of the salmon and butter.  It delights the senses and adds an earthy, wintry spark.

Why Smoked Salmon?

Wild-caught Alaskan salmon is a national treasure and still on the Best Choice list for salmon by the Monterey Bay Aquarium's Seafood Watch List.  Salmon is chock full of omega-3 fatty acids, vitamin D, B vitamins, and protein.  It's notable for promoting heart health, being anti-inflammatory, protecting against cancer, benefiting cognitive function, and more.  For more on it's incredible benefits, check out the World's Healthiest Foods: Salmon page--it's a long one!  


Try to find wild-caught, Alaskan smoked salmon without the sugars and nitrates if possible.  NOTE: you might want to reduce your high dosage omega-3 fish oil when you eat a lot of fish or else you run into the upper limit digestive tract nasties.  If you have been there, you know it isn't pretty! :)


Why Kale?

Kale is delicious and nutritious. Packed with antioxidants, vitamins, minerals, CALCIUM, and over-rated fiber, this veggie is a superfood.  It is known for fighting and preventing cancer and detoxifying your body. Why Eggs?

OMG, do you have to ask?  They are perfect little packages of everything you need from an animal food, including protein (ALL the essential aminos), fat (yes, the healthy kind), and some other beneficial stuff like vitamins, minerals, and cholesterol (Yes, that's a good thing.  If you don't know that, read this short list of cholesterol facts from the author of The Cholesterol Myths).

There are a couple potential downsides to eggs.  One is the antinutrients in the egg white.  No, not it's heart disease risk, silly.  That's an old dietician's tale.  Read this from Eat Wild:

Eating eggs does not appear to increase the risk of cardiovascular disease or stroke
Cutting back on egg consumption has been widely recommended as a way to lower blood cholesterol levels and prevent coronary heart disease. Is this valid advice? Recently, researchers took a close look at the egg-eating habits and heart health of 118,000 men and women. The scientists reported that "we found no evidence of an overall significant association between egg consumption and risk of CHD [coronary heart disease] in either men or women." In fact, they found that people who ate from 5 to 6 eggs per week had a lower risk of heart disease than those who ate less than one egg per week.
One wonders what the scientists would find if they looked at the heart health of those lucky people who eat eggs from pastured hens?

So back to the egg white.  Read The Incredible, Edible Egg for more on why eggs whites are INFERIOR to egg yolks.  So people who say they are having egg white omelets for their health are grossly misinformed to put it lightly.

And here is a counterpoint to the arachadonic acid (AA) being a "benefit." This is what Whole Health Source had to say about omega-3 eggs:


Eggs are an exceptionally nutritious food, as are all foods destined to nourish a growing animal. However, one concern lies in eggs' high concentration of arachidonic acid (AA), a long-chain omega-6 fat that is the precursor to many eicosanoids. Omega-6 derived eicosanoids are essential molecules that are involved in healing, development and defense. Some of them are inflammatory mediators that can contribute to disease when present in excess. Eggs are one of the main sources of AA in the modern diet.
and 
Not everyone has access to pastured eggs. "Omega-3 eggs" come from hens fed an omega-3 enriched diet*. Not only do they have a much higher omega-3 content than conventional eggs, they also contain less AA [. One study found that omega-3 eggs contain 39% less AA than conventional and organic eggs. Omega-3 eggs were also rich in short- and long-chain omega-3 fats. Omega-3 eggs are certainly not nutritionally equivalent to pastured eggs, but they're a step in the right direction. 
I don't really know if the AA content of eggs is a concern. Eicosanoid biology is complex and it doesn't like to fit into simple models. I'll look forward to seeing more research on the matter. In the meantime, I'll be eating pastured eggs, and when they're not available I'll eat omega-3 eggs.
*Typically from flax seeds, but some operations also use seaweed. The hens in the paper I cited were fed flax. The hens managed to convert a substantial portion of the alpha-linolenic acid into the important animal fat DHA, and presumably EPA although it was not measured.


Ah, but the controversy isn't over!  There is also the issue of the omega-3 'enrichedness' of eggs.  Robb Wolf and other esteemed sources like the omega-3 enriched because the chickens are fed flax, algae, and/or fish oil, so their eggs are chock full of omega-3s.  The ratio of EPA, DHA, and ALA might vary by source, but you probably should be getting your omega-3s by fish and fish oil anyhow.  

However, just when I thought omega-3 enriched eggs were second only to naturally pastured, Dr. Mercola burst my bubble.  He says that omega-3 enriched eggs result from chickens fed RANCID flax, so they are LESS healthy than regular pastured eggs.  According to Dr. Mercola we should avoid omega-3 eggs because they oxidize faster and don't last as long as other eggs.  ARGH!  

So the oxidation concerns may be legit, but I couldn't find other vocal sources demonizing omega-3 eggs.  Have you? 

So, I'll take eating the whole egg of pastured chickens when I can get them, or omega-3 enriched organic, pastured, free-range, cage-free, hippie-dippie store brand when I can't.  But then, whether oxidized or not when I get them, I am no egg saint because I cook them scrambled or fried.  I KNOW, KNOW--the overcooked egg is creating free radicals that are going to kill me, but damn it, I don't like runny, wet eggs.  I'm sorry.  I'll find the best quality eggs I can and I'll take a hit on the cooking method.  Sorry.  If you want to be a better human being, don't overcook them like me :)

And looks like I am not alone.  How to cook eggs, according to Robb Wolf:
..over medium or soft boiled is likely best. Love scrambled however. Keep the flame kinda low, use plenty of olive oil (antioxidants in there) and enjoy IMO. I may be wrong but I doubt this poses a significant risk with regards to oxidized fats.
Of course, I have read contrary advice on olive oil--that it should only be used to flavor food upon serving, never used for cooking.  So the moral of the story is: you are probably going to find someone out there that disagrees with everything you do.  Suck it up and make your choices based upon as much information as you can, plus a little faith that eating a real food diet MOST of the time with meat and veggies, nuts and seeds and healthy fat, some fruit and dairy if you want it, a little starch, and no sugar will do you infinitely more good than the stress involved in splitting hairs over every detail. :)


Why Butter?

Why not?  You don't actually still believe the saturated fat myth, do you?  Mark's Daily Apple has a great summary of that argument.  

I went with Kerrygold butter today because my local source of Organic Pastures Raw Grassfed Butter just can't keep up with the demand and the stores are always out of stock (or maybe it's another reason--but I can't reliably find it anymore).  Kerrygold is pasteurized, boo, but the cows are pastured, yay.  Here is more info from The Nourishing Gourmet.  You should have seen my beaming smile when I read in Robb Wolf's book: The Paleo Solution that I could partake in butter without being a paleo rebel.  He says: 

So, what's the story with butter? It's dairy, right? Therefore on the Paleo "no fly" list? Well, butter is dairy; it can present some problems for folks with autoimmunity because of the milk protein content and lectins that are still a part of the butter. Sorry hippies, even clarified butter (ghee) is a problem. I would, however, put grass-fed butter on the "occasional" list. The fatty acid profile is better (lower in palmitic, much higher in CLA) and the antioxidant content is nothing short of impressive. Butter is mainly fat, so if we clean up the lectin problem, and push the fatty acid profile toward that of healthful grass-fed varieties, it's tough to build much of a case against grass-fed butter unless you have autoimmunity. See, I'm not a zealot after all.

So without further ado, here is the recipe!


Cinnamon, Smoked Salmon Kale and Eggs 
Butter makes this breakfast lip-smacking delicious, but the players: kale, eggs, cinnamon, and smoked salmon make this nourishing fuel.  Way to start your day!


Cooking Time: 15min start to finish including preparation


Quantity: play around with the quantities to get the desired serving size for each diner.  I usually have a couple of eggs and ounce or two or salmon.  That'll satisfy me well into the afternoon. 

Ingredients:
  • Pastured Butter (grass-fed, raw if possible), salted or just add a pinch of salt to taste 
  • Kale to cover the bottom of the skillet for each diner such as 2-3 stalks each of curly kale and purple kale, use any variety of kale/chard as you like--as much or as little as you want, remember: it cooks down
  • Pastured eggs (or omega-3 enriched, organic, free-range, cage-free, etc.)
  • Ceylon Cinnamon (note: if you aren't a cinnamon lover, just omit this, I won't be offended ;) )

Method:

Start the skillet over medium heat and melt a pat of butter till the bubbles subside and it starts to darken.  Meanwhile, tear the kale greens into bite-sized hunks from the woodier parts of the stems and rinse in warm to hot water to start the cooking process.  Squeeze them dry and add them to the melted butter in the skillet.  Stand back and watch out for popping if your greens were wet!

Give the kale some time to wilt and then turn them.  Once you feel they are pretty tender (5min give or take), remove them from the pan.  Alternatively, you can try to spread them out to the sides of the skillet and create a well in the middle for the eggs to cook.  Start a little earlier so the greens don't overcook, if so.

Add more butter to the skillet, wait till the bubbling stops and add eggs.  Cook your eggs as you desire them and sprinkle cinnamon on them if desired.  Remove the eggs (and kale if you had it in there) and add a bit more butter, melt it, and add the salmon.  Stir until you warm the salmon.  I don't normally cook the salmon before the eggs and scramble them together because it dries out the salmon too much.  I rather just a warming in hot butter :)

Once the salmon is done, pour it on top of the eggs, making sure you get ALL of the remaining butter from the pan.  Sprinkle some more cinnamon on top if desired.  Serve 'um up--one delicious, heart-heathy, brain-healthy, fuel-for-your-body meal that'll keep you satisfied for many hours to come!

And go on, lick the plate.  I won't tell :)

Starter Series: 1. Eat Meat

I have been meaning to write up a Starter Series for those of you new to the blog and future visitors.  I know there are recipes buried in long-ish posts (I'll try to sort those easier for you in the future, for now, I suggest search or keyword/tag and using the Starter Series).  I also realize that some of the rants might scare away potential readers because they lack the context of knowing what the paleo lifestyle is all about.  So let me explain why I eat the way I eat.

Living paleo-style is built on some core principles: Eat meat and veggies, nuts and seeds, some fruit, little starch, little dairy, no sugar, no grains, and no legumes (we'll talk more about dairy and why it's "little" instead of "no" when we get there).  Fish oil and vitamin D supplementation will also be discussed in good time.  Note: this isn't strictly Paleo, Primal, Zone, or the CrossFit dietary prescription; it's just my take on what works best for me and for many others, and no, it's not a diet--it's a lifestyle built for long-term sustainability.

Today's Starter Series tackles our first core principle:
  • Eat meat.  
The types of meat are preferably grass-fed (if the animal eats grass; if not, then whatever the animal would eat in the wild), organic, and pasture-raised.  The less-processed, the better.  Eggs (from pasture-raised poultry eating a wild diet and possibly supplemented with flaxseed for higher omega-3 content) and seafood (wild caught and coinciding with the best choices on the Seafood Watch List) would fall into the meat category.  Animal fats would also fall into this category, and they are healthy despite what the saturated fat myth-perpetuators would have you believe.

Why Eat Meat?

Humans eating meat has a long evolutionary history.  There are theories about our large brains, tool use, social complexity, and aptitude to cover the globe that focus on meat as the impetus for these evolutionary changes.  Eating meat does not separate us from all of our great ape cousins (for example, chimpanzees hunt too), but the regularity of meat in our diet over millions of years has set us apart.  In The Omnivore's Dilemma, Michael Pollan discusses how our biology (gut, teeth, and jaws) is that of an omnivore--an eater of both plant and meat.  We require essential fats and amino acids that match those present in other animals.  The most efficient way to meet those requirements without risk of deficiency is to eat meat.  This is a biological reality.  

Meat should be an important component of EVERY meal.  Here's why:

1.  Meat, since its from animals (not so different from ourselves), provides a complete protein source filled with a full complement of essential amino acids, which we require from our diet (we cannot synthesize them in our body).  Yes, you can get small amounts of protein from plants, but they are ALWAYS incomplete, lacking some essential amino acids you need to survive, and they are ALWAYS poor protein sources because plant protein is encased in cellulose cell walls that we were not built to digest, unlike ruminants (ex. cows).   It is simplest to obtain what we need from the most complete source: meat.  

2.  Meat provides essential fatty acids, omega-6s and omega-3s.  Both are needed for our bodies to function and ideally there is approximately a 1:1 ratio of omega-6 to omega-3.  However, our modern diets are looking more like 20:1.  Too much omega-6 can be detrimental (producing harmful arachadonic acid leading to inflammation).  Unfortunately, omega-6 saturates our modern diet though our use of vegetable oils in nearly everything (just try label shopping and be horrified by the ubiquity of "vegetable," canola, sunflower, corn, soybean, and safflower oils in almost everything boxed, jarred, canned, or bagged).  We need to focus on getting more healthy omega-3 fatty acids back into our diet.  Omega-3 is protective against disease and inflammation.  It's source?  Meat (which includes fish) [note: flaxseed is an omega-3 source too, but it has inefficient conversion to the EPA and DHA that are more beneficial omega-3 fatty acids and has been linked to prostate cancer].  However, not just any meat will do.  Deep, cold-water fish and grass-fed meat are high in omega-3 fatty acids.  Compared to grain-fed beef, grass-fed beef a vastly higher amount of omega-3 fatty acids and a better ratio between them and omega-6 (closer to 1:1).  Grass-fed beef also contains two to three times more conjugated linoleic acid (CLA), which is protective against heart disease, diabetes, cancer, and obesity. Furthermore, grass-fed beef has twice as much beta-carotene (vitamin A precursor) than grain-fed beef, and three times more vitamin E.  This nutritional profile is one reason why I suggest eating animals that eat what they evolved to eat, just like we should eat what we evolved to eat.

3.  Meat provides vitamins and minerals essential to life.
  • Vitamin B12 for one is ONLY naturally available in meat and meat products (like dairy) (other sources for vegetarians are fortified foods and supplements).  Although some synthesis happens by bacteria in the body, food sources or supplementation is necessary to avoid deficiency.  Vitamin B12 plays a vital role in metabolism, brain and nervous system functioning, and red blood cell formation.  Without enough vitamin B12, you get anemia and can develop serious and potentially irreversible brain and nervous system complications.  Sounds fun!
  • Iron is also vital within our bodies for oxygen transport to the cells.  A diet lacking enough iron can lead to iron deficiency anemia, which means the tissues aren't getting enough oxygen to function properly--they're suffocating.  The iron in meat is more available than in plants.  This means your body can digest and absorb animal sources of iron easier because their iron is not bound up in plant fiber and protein nor inhibited from being absorbed through anti-nutrient action.  Yay, for not being anemic!  
  • Zinc is another mineral necessary to our metabolism and immune system health, and it more readily absorbed from meat than plant sources.  The bioavailability of zinc in animal foods is superior because zinc absorption is not inhibited: phytates in plants bind to metallic elements like zinc so that we can't absorb them.  The absorption of zinc from animal foods is enhanced by the presence of amino acids also found in animal foods.  Zinc deficiency brings fun things like impaired physical and neuropsychological development and a compromised immune system.
  • Other notable vitamins and minerals more readily absorbed from meat than plants include vitamin B6 (essential to your nervous system, metabolism, and blood) and selenium (integral to thyroid function, oxidative reactions, and joint health).  As I already mentioned, grass-fed beef trumps grain-fed for its beta carotene (vitamin A precursor) and vitamin E content.  Chicken notably is a great source of niacin, a vitamin essential for healthy DNA.  Fish is an excellent source of potassium (integral to chemical reactions and cell membranes), magnesium (important to blood flow, chemical reactions, and protein synthesis), and phosphorus (a component of bones, cell membranes, blood cells, and DNA), in addition to high omega-3 fatty acids.  Sounds like a superfood to me!
The Anti-Meat Beef

To be fair, since I've presented the benefits, now let's look at the argued detriments to eating meat.  Here are a few arguments against eating meat, along with my rebuttals.  Granted, there are probably dozens more arguments out there, but here are some we can tackle today.  I've chosen to compare and contrast a meat-based diet with a grain-based diet, since without meat, one would find it hard not to rely upon grains.  And you are hereby warned that this is going to get ugly :)

1.  Eating meat wastes energy. 

The thought is that eating higher up the food chain, consumers instead of producers, takes more energy.  The consumer had to eat loads of producers to survive, while those producers just harnessed ambient resources: water, sunlight, and minerals.  There are some flaws in this argument, though.  Besides the fact that we are omnivores and require essential amino acids and fatty acids meat is best able to provide, the whole consumer/producer concept is inaccurate.  Producers are consumers too--they rely upon a healthy soil filled with microorganisms and minerals that nourish them as much as the sun and water required for energy production.  They don't produce in a vacuum; they rely upon other organisms to survive and die, fertilizing the soil.  You can't grow crops (even in a garden) without fertilizer or you'll deplete the soil and make it infertile.  The Vegetarian Myth author Lierre Keith experienced this first hand when she tried to grow a garden without the killing or subjugation of animals.  She found that the only sources for the essential nitrogen needed to grow plants is fertilizer, which either comes from manure or animal blood and bones (products of animal domestication) or from chemicals that require fossil fuels to produce (also from animals, albeit ancient ones).  Producers consume the resources other organisms provide.  Think "circle of life" (complete with singing meerkats and warthogs) rather than a linear model.  

For those that say the meat industry is more energy-wasting than agriculture, I agree in terms of factory-farmed meat.  I wholly agree with ending that despicable industry.  But for a more balanced argument, one must look at grass-fed, pastured, and wild caught to compare.  While transport, processing, and distribution costs are based upon consumption, grain crops have a much higher reliance on fossil fuels for their cultivation.  Both grass and grain crops need sun and water, but grains also need fossil fuel produced fertilizers and pesticides, while grass does not.  Grain crops have a heavy reliance on humans to meet their needs, whereas healthy grassland just needs ruminants and a healthy ecosystem to thrive--it can exist on its own.  Grassland is a more natural state than cropland, especially with our genetically modified monocrops.  And if we can't eat the grass, why not utilize creatures that can?  I believe that wise use of our resources (a focus on grass-fed, pastured, and wild-caught animal foods rather than grain crops) is better for our health, the health of our food sources, and the health of our planet.


Just as grain crops are used for energy like biofuel, grass is another potential energy resource.  Since less fossil fuel would be required to utilize grass for energy, compared to corn, the net energy gain would be more substantial.  Like corn, grass can duel task as livestock feed and as an energy resource, with the added benefit of not sickening cows (and requiring them to be pumped full of antibiotics).  Grass pellets are an efficient renewable energy source.  Read more on this in argument #4 below.  


2.  Eating meat wastes grains fed to livestock that should feed starving people.

Wow, this is a biggie.  Let's skim the surface of a few parts.  For one, grains shouldn't be fed to livestock.  Period.  Grains are not their natural diet and they make them sick.  Same argument goes for us, whether or not we choose to admit it.  Grains make us sick, for most of us perhaps not so acutely and observably as cows fed corn (although aren't we pumping ourselves full of antibiotics too?), but human grain-eaters are slowing dying on the inside with impaired digestion and risk of a pandora's box of diseases.  Read Pasta Sans Pasta and many of my other posts to find out more about grains.  Finally, feeding starving people grains is not the answer.  In addition to being of poor nutritional quality, grains given through charity lead to a recipient country's economic ruin as their own farmers can't compete with the handouts we provide.  Why should they farm if we can provide food for free?  There is more to this complex political and economic rat's nest in The Vegetarian Myth.  I highly recommend it!

3.  Eating meat is cruel.  

Factory farming is cruel.  There is NO argument there.  But if we support grass-fed beef producers, pastured pork and poultry farmers, and wild-caught seafood, we aren't supporting cruelty.  We are trying to make a difference by eating what is healthiest for us, these animals, and the environment.

Think you can get out of killing by being a vegetarian, think again.  This anti-meat argument ignores the fact that plants are alive too and have complicated reactions to our presence and our influence much like "feeling."  In The Vegetarian Myth, Keith discusses how plants communicate, protect each other, and live symbiotically with other lifeforms, both plant and animal.  Any botany textbook will provide the evidence to back this up.  To reduce plants to inanimate objects is inaccurate, disrespectful, and naive.  Can one really hold up an argument that ranks life so that one feels better about one's food choices?  Of course, we should make better choices and treat ALL of our food with more respect.  Now you can understand my outrage over reading the bumper sticker, "Eat beans not beings."  Can't you just see the flame...flames...FLAMES on the side of my face, breathing...heaving breaths...heaving... (a la Clue)

4.  Eating meat wastes land.

Contrary to popular belief, not all land is meant for agriculture.  Most land is entirely unsuited to growing grains, so we have to pump in water and fertilizer and rely on chemicals to force our crops to grow.  Water for agriculture is being sucked from natural sources, changing landscapes and destroying environments.  Fertilizers, pesticides, and manure made toxic from antibiotics, hormones, and those ingested fertilizers and pesticides are flowing into the groundwater, rivers, and oceans disrupting environments and killing native wildlife.  Those chemicals are even poisoning our own water sources.  When do we realize we are trying to fit a square peg into a round hole with forcing agriculture?  Grass converts the sun's energy into biomass without the need of fossil fuel chemicals as long as it is in a thriving ecosystem incorporating diverse animal and plant life.  With rotation of ruminants that fertilize, compact the soil, and renew the vegetation, grasslands are a self-sustaining ecosystem.  By contrast, monocrops are creating unproductive wastelands requiring more and more fossil fuel-derived chemicals to maintain.  Grass grows more places naturally than does any grain.  And since we don't eat grass, why not use it to feed our livestock?  There is no competition.    

5.  Eating meat isn't healthy.

If you look for it, there is a study out there to support it.  Meat-eaters and vegetarians are both opinionated groups with personal, economical, political, and medical arguments in favor of their side.  As such, meat has been implicated in cancers, heart disease, obesity, etc.  The list goes on and on.  I've already tackled the myth about "deadly" saturated fat, and debunked the "all cholesterol is bad cholesterol" myth in that post.  Plus, my arguments about sugar and its relationship to diabetes and obesity should shift the metabolic burden on carbohydrate sources.  See Fatphobia, Diabetes Doesn't Have to be Part of a Complete Breakfast, and Just Say No...To Juice? for more on this topic.  

Colon cancer has been linked to eating red meat in some studies, notably in North and South America, but there are so many contradictions (like Mormons, Argentinians, New Zealanders, Australians, etc. having lower incidence despite being hearty meat-eaters, while vegetarian Seventh Day Adventists have a higher incidence--huh???).  Dr. Eads comments on the perpetuation of non-existant conclusions here.  It is important to ask: what part do the refined grains in human diets and in the diets of conventional livestock play in this relationship?  I'd like to see what health problems can be linked to eating pastured poultry and pork and grass-fed red meat.  Then, there would be something to talk about.

There is also the scare of kidney damage with too high protein in the diet.  Here is an study published in the Journal of the American Dietetic Association disputing this claim.  From the abstract:
A frequently cited concern of very-low-carbohydrate diets is the potential for increased risk of renal disease associated with a higher protein intake. However, to date, no well-controlled randomized studies have evaluated the long-term effects of very-low-carbohydrate diets on renal function. 
their conclusion:
This study provides preliminary evidence that long-term weight loss with a very-low-carbohydrate diet does not adversely affect renal function compared with a high-carbohydrate diet in obese individuals with normal renal function. 
 
Arguments about meat being unhealthy and unsafe due to its antibiotic, growth hormone, and pesticide content are true for factory-farmed meat (including conventional dairy).  I couldn't agree more to rid this from your diet.  However, grass-fed and pastured sources of meat don't rely on pesticide-ridden food or require heavy antibiotic dosages to survive (albeit wild fish still become toxic due to polluted environments, so take caution, but they are still more healthy than their farmed relatives who must endure overcrowded, toxic pens and are pumped full of antibiotics to keep them alive--sound familiar?).  This is just more argument to feed animals the right way and use their resources wisely.  Since grain crops require pesticides, unlike grass, the argument for grain over meat is hollow and gives more support to eating grass-fed meat and eliminating grains from your diet.

6.  Eating meat is polluting.

You mean more polluting than the pesticides and fertilizers (produced using fossil fuels, of course) necessary to force crops to grow in environments becoming less suitable to their growth due to over-farming?  You mean more polluting than the energy required to harness distant water sources and fuel machinery to cultivate, transport, and process the "bounty"?  Yes, factory-farm animal waste is polluting water sources because it is filled with antibiotics and pesticides passed through the animals forced to live on a toxic diet.  Manure makes ideal fertilizer, when it comes from a clean diet.

And the higher emissions argument for grass-fed as opposed to grain-fed cattle?  The methane released from grass-fed cows is countered by properly ranged soil holding onto more carbon, which protects against drought and greenhouse gas emissions.  It is also countered by a healthy ecosystem incorporating plants that reduce methane and soil bacteria that neutralize it.

When it comes down to it--we are the ones who are polluting.  But we have a choice to lessen that burden.  We can choose to use our resources wisely and most efficiently.  Grain-based diets are trying to fit a square peg into a round hole.  To forgo meat is to turn your back on biological, financial, and political reality.  Our burden on this planet can be lessened.  In the case of raising animals, we can reduce our carbon footprint by eating grass-fed, pasture-raised, wild-caught meat.  


No doubt, there are more anti-meat arguments out there.  But hopefully I provided you with some ammunition to fight back and proudly eat your meat.  We'll continue this discussion in our future Starter Series: Why No Grain post.

Here is a simple, delicious recipe to add to your breakfast repertoire.  It can easily be Zone balanced with fat, carb, and protein if desired.  You can also add some berries to give it more of a fruity kick.  


Apple-Cinnamon Chicken Skillet
Warm and crunchy, with sweet cinnamon to wake you, this is breakfast.  
Cooking Time: 15minutes or less start to finish

Ingredients:
left-over chicken with any skin it might still have (any chicken will do [but pastured/free range, of course], as long as it is cooked and its flavoring doesn't clash) (use 2-5oz depending on the desired size of your breakfast), cut into bite-sized pieces
1 un-peeled apple, sweet or tart according to your preference, cut into bite-sized, thin slices 
coconut oil (a tbsp will probably work, depending upon the size of your breakfast)
Ceylon cinnamon

Method:
Start a skillet over medium high heat.  Add coconut oil and get it hot.  Then, add the apple to the skillet and dust with cinnamon.  Cook until it starts to brown in the coconut oil.  Add your chicken to the skillet.  Toss it and the apples and dust with more cinnamon.  Allow the chicken to crisp up a bit--this shouldn't take more than five minutes.  Remove to a plate once you have desired softness with your apples and have warmed the chicken, creating some delicious crunchy bits.  Dust with more cinnamon if you are a cinnamon fiend like me.  Enjoy your healthy, balanced breakfast!

Diabetes Doesn't Have to be Part of a Complete Breakfast






I have said it before, but it bears repeating: the single, most effective change in your diet is changing your breakfast.  It is the simplest change to implement and starts your day on the right path.  Change your breakfast first.


Let's discuss why a change is necessary.  What makes the traditional American complete breakfast so wrong?


Read this article from the Santa Cruz Sentinel.  Did it make you scream like me?  Shouldn't educators know better?  ARGH!  Here are some gems:
Waffles might soon be on the menu at two Watsonville elementary schools, if the Pajaro Valley Unified School District gets $27,000 in state grants they've applied for to improve their breakfast programs.
and:
 The kids could munch on yogurt, muffins, string cheese and waffles while teachers take attendance.
the kicker:
 "It definitely won't be doughnuts," she said. "We want to provide a nutritious breakfast."


THIS is why there is a problem, Houston.  Educators can't see that waffles (drenched in syrup of course) and muffins (especially if they are whole grain and/or contain sugared fruit) AREN'T a better choice than doughnuts.  Can the protein and fat (how much do you want to bet the yogurt and cheese will be reduced-fat?) in the pasteurized, grain-fed dairy even come close to balancing out that refined sugar?  Can you see why there might be such high incidence of ADHD amongst children fed so much sugar?  Doesn't it irk you that the educators who should know better don't have a clue? *screaming at the top of my lungs with frustration!!!*


You Call This Complete?


Okay, so why not feed kids what everyone tells us to: cereal and milk?  You have all seen the commercials; they're part of a complete breakfast.  A bowl of cereal alongside a piece of fruit, toast, glass of OJ, and glass of milk.  Classic.  Breakfast cereal as our morning staple has been inGRAINed in our culture for over a century.  Let's balance the books on the "complete breakfast" and discuss why this is NOT optimal fuel for anyone--especially kids!

1 cup of let's say a middle of the road cereal like Cornflakes (probably too bland for most kids, but let's err on the side of seemingly less sugary breakfast cereal)
Fat: 0g, Carb minus Fiber: 23g, Protein: 2g    Zone Blocks:  2.5 Carb
(here is my source for nutrition facts and Zone diet lists like this are useful based on the 3g of Fat per block, 7g of Protein per block, and 9g of Carbohydrate per block--usually taking only the highest macronutrient of a food)

1/2 cup of 1% milk    Zone Blocks:  0.5 Protein and 0.5 Carbohydrate (combo food)  (we are using "healthier" 1% fat milk since we all know that fat is bad but skim milk tastes like water)

1 banana     Zone Blocks: 3 Carb  

1 cup orange juice     Zone Blocks: 3 Carb  

1 cup 1% milk  Zone Blocks:  1 Protein and 1 Carb    


1 slice of classic Wonder bread  Zone Blocks: 2 Carb


1T jam  Zone Blocks: 0.5 Carb (because we all know that butter is bad and high fructose corn syrup-laden jam is SO much healthier--hey, its fruit, right?)

Zone Block Totals for this "Complete Breakfast": Fat: 0  Protein: 1.5  Carbohydrate: 12.5


Even worse, let's cut out the cereal and feed our kids a "nutritious" waffle breakfast with each waffle at 2 Carbohydrate blocks and 2tsp syrup accounting for each additional Carb block.  Two waffles with a modest 2T of syrup delivers 7 blocks of Carbohydrate with NO fat and NO protein.  That atrocity isn't even taking into account the heavy processing and high fructose corn syrup.  Sound nutritious?

Results of the Complete Breakfast:
1.  Quick energy followed by a crash soon after--ever feel like a mid-morning nap?  Perhaps this "complete" breakfast is one reason why we have such a coffee addiction...
2.  Lack of concentration--you are on a hormone roller coaster, good luck staying focused!  According to the Zone diet, a balance of protein, fat, and carbohydrates is essential to balance your hormones and give you and even keel.  This makes sense to me--I have definitely felt sleepy after a huge pancake breakfast or pasta meal.  Imagine how the kids feel flying high on sugar from breakfast!
3.  Hungry within hours--since this meal was so overbalanced with carbs, you'll be hungry soon after.  There is no satiety here.  A breakfast deficient in fat spells hunger since fat is what slows down your digestion and promotes satiety.  Don't get me started on how much the non-fat movement is misinformed, unhealthy, and downright dangerous...
4.  Cranky and moody--yup, more perks of the hormonal roller coaster!
5.  Insulin resistance--since you gave your body a nice megadose of sugar to deal with good luck not overreacting to all subsequent foods you eat.  See more system mechanics here.
6.  Fat storage--the excess carbohydrate must go somewhere after you fill up your muscle and liver cells.  Guess where?

Let's get to know our pal, Glucose

Glucose is a fuel for the body.  Your body needs it and your brain can't function without it.  It is a simple sugar that all carbohydrate sources break down into.  The speed of carbohydrate digestion (breaking a carbohydrate down into its constituents) depends upon the chemical bonds between the sugars that make up the carbohydrate and the presence of fat, which slows the absorption of sugar into the bloodstream.  The bloodstream is where is all goes down: glucose enters, the hormone insulin is released to get it out into the cells before its levels become toxic and lead to all sorts of nasties.  Glucose is used for energy in muscle and liver cells, but excess is stored in fat cells, making you fatter.  Thus, too much carbohydrate makes you fat.  But that is a story for another day.  Read Pasta Sans Pasta for more information about glucose and blood sugar.

What Glucose Means To Your Body: The Glycemic Index

The glycemic index measures how quickly glucose enters your bloodstream after you ingest a food item.  Quick transfer means your body has an insulin crisis on its hands.  The glycemic index is based upon a scale where pure glucose is 100 for 50g of pure carbohydrate to rank its rapid transfer from your digestive system to your bloodstream compared to 50g of carbohydrate in other foods.  Another lesser-used standard used is white bread, which would be set at 100 and glucose would then be 140 (funny when you realize bread is nothing but sugar to your body).  Either way, shoot for foods below 50 to have a lower glycemic diet.  These foods tax your body less and don't put you on a hormonal roller coaster.  What carbohydrates are low glycemic?  Most fruits and veggies (tropical fruit and root veggies are exceptions).  The more you process and refine a source, the worse it becomes.  For example, take table sugar (sucrose) at an average of 68 on the glycemic index.  With glycemic indices of 42 (All-Bran) to 113 (New Zealand's Fruity-Bix), seemingly healthy breakfast cereals are as bad or worse than sucrose to your body.  Let me say that again since it is so important: processing grains makes them as sugary or even more sugary to your body as pure sugar.
Limitations: the glycemic index measures carbohydrates and their glucose entering the bloodstream, so it doesn't apply well to protein or fat.  Also, it measures 50 grams of carbohydrate of the food in question, which may be quite a hefty quantity of some foods and nowhere near appropriate serving size.  Finally, everyone's body is different, so I suggest you try to figure out your own responses to foods to see how they effect you.  HOWEVER, this doesn't mean that since you have been eating bread forever and have never felt anything wrong there is no reason to give it up.  WRONG!  Try going without grains for 2 weeks.  Then, introduce grains back in and see what happens.  If you really went cold turkey on all grains, then you'll likely get sick from eating them again or at the very least have a terrific carb hangover the next day.  Bleary, puffy eyes, crankiness, congestion or drippiness, repetitive snooze button pressing: these are the gifts of grain.  Good luck taking back bread/rice/pasta and re-entering the grain-induced coma.  Dude, I get a sniffle just from eating rice!  Seriously!

To summarize: the glycemic index measures how fast carbohydrates in food are broken down into their constituent sugars during digestion so that the sugar glucose enters the bloodstream.  Values close to 100 spike your blood sugar rapidly, while those lower on the scale are less likely to overload your bloodstream because they are entering at a rate insulin can handle.  Shoot for foods below 50 to have a lower glycemic diet.

Another Layer of Complexity

The glycemic index only gives a partial picture of food since it doesn't account for portion size.  The glycemic load is another scale that takes into account portion size with the idea that consuming low quantity of high glycemic food has the same effect on the blood as higher quantity of lower glycemic food.  It is calculated by quantity of carbohydrate in the food (minus the fiber) in grams times glycemic index value divided by 100 (the last step is optional and some GL values are given in numbers greater than 500).  When divided by 100, the numbers are lower than the GI scale. Values of 10 or less are considered low and values 20 and greater are high.  Some foods that are high on the glycemic index are lower when you take into account how much carbohydrate is in them--this includes high glycemic fruits filled with water and fiber (ex. watermelon with a glycemic index of 72 but only a glycemic load of 4).  Not surprisingly, the concentrated sugars in dates and raisins place them high on both glycemic scales.

For the most part, foods we should avoid anyway that are high on the glycemic index also have a high glycemic load.  Most fruits and vegetables are low are both scales.  The American Journal of Clinical Nutrition's listing also provides glycemic load values on its chart.

Check out the chart for the GI and GL of common foods.  Notice those "healthy" cereals that are part of a "complete" breakfast.  Nice to know that sugar is part of a complete breakfast.

Let's look at our complete breakfast above for how it tallies in glycemic load (remember, values of 10 or less are considered low glycemic load):

So, what are high glycemic foods?

Grains are!  Most breads come in at 40-75 on the glycemic index (5-12 GL), pastas 45-60 (15-30+ GL), and grain-based breakfast cereals are almost laughable: not only are their glycemic indices close to (even exceeding!) 100, but their glycemic loads are reaching and exceeding 20.


Here are some examples:
71 GI / 18 GL  for Golden Grahams (I used to eat those like chips and devour a whole box in a day!)

76 GI / 17 GL for Total (more like Totally sugar--I thought this was a bland, healthy, adult cereal!)

74 GI / 15 GL for Cheerios (the "heart healthy" food)
89 GI / 23 GL for plain, old Rice Chex!


82 GI / 22 GL for Rice Crispies (snap, crackle, pop!  is that the sound of your insulin?)
Can you believe that Special K (69 GI/14 GL) is basically the same as Fruit Loops (69 GI/18 GL) to your body?


As a college kid, I thought that eating cheap cereal was great because it was fortified and "healthy" enough to be my 3 meals a day!  OMG


Some grains and legumes are a mixed bag: some low, some high, but really not ideal when you take into account antinutrients, gluten, and lectin (see Pasta Sans Pasta for more discussion about these).

The next highest glycemic index foods are root veggies like starches and some fruits, mainly tropical varieties.  For example, corn (54 GI/ 9 GL), carrots (47 GI/ 3 GL), beets (64 GI/ 5 GL), potatoes (50-80+ GI/ 10-20+ GL), and sweet potatoes (61 GI/ 17 GL).  We already covered fruits and their lower proportion of carbohydrate accounting for a lower glycemic load in most cases.  Here are some examples: apples (38/6), grapefruit (25/3), grapes (46/8), mango (51/8), orange and peach (42/5), and strawberries (40/1).  Starches (including grains, pasta, and potatoes) are the storage form of energy in plants.  Your digestive enzymes rapidly convert starches to glucose, hence their high glycemic index values.  Preparation and types of starches can effect their glycemic index quite significantly, but safe to say they are medium to high regardless.  Check out our discussion of sweet potatoes from a previous post.

Besides root and starchy vegetables, other vegetables are not listed on the glycemic index or load charts.  This is because they have so little carbohydrate content that one would have to eat an enormous amount to get any glycemic rating.  So you can eat your veggies guilt free!


Lesson Learned?

Eat your fruit and veggies.  Eat high glycemic root veggies, fruits, and other starches in moderation.  Sadly the "complete breakfast" is a money making myth propagated by mega corporations to sell their sugary products.  And to whom do they advertise to seal the deal?  Children, who can pressure their parents and keep the myth alive from generation to generation.  From the article on school breakfasts, it looks like these companies have done a great job duping the general public and educators alike.


But now you know better.  A REAL complete breakfast is balanced fat, carbohydrate, and protein consisting of real, whole foods (if anything, we've learned to err on the side of lower carbohydrate quantity, NEVER higher).  Our paleo-style prescription of eating meat and vegetables, nuts and seeds, some fruit, little starch, no sugar, no grains, no legumes, and little to no dairy holds water when applied to the glycemic scales.  And now you know why it says "some fruit" and not all you can eat.  There is more to this story with type of sugar and the evils of fructose, but we'll save that for next time, Gadget, next time.


In the meantime, here is my fruit for the day.  After this, it is all veggies.  To some, this may be more morning sugar than they can take, and since everyone is different, I suggest you experiment to see what your body thrives upon.  This is sweet enough for the sugar-fiend inside me, but chock full on antioxidants and insulin-boosting Ceylon cinnamon.   Delicious!

So syrupy sweet with cinnamon spice--it fragrances the house and warms your belly!
Cooking Time: start to finish less than 10 minutes


Ingredients:
1 apple  (medium to large or 2 tiny ones), sliced into bite-sized slivers
1/2 to 1 cup frozen berries
Ceylon cinnamon


Method:
Toss apple slices with plenty of cinnamon in a microwavable bowl or on a microwavable plate.  Microwave uncovered for 2 minutes.  Remove, add berries (still frozen, right from the freezer bag is fine).  Dash cinnamon on top.  Microwave another 2 minutes until berries are warm and syrupy.  Remove, dust again with cinnamon if desired (and I ALWAYS desire).  Stir to combine and feast upon this warm, fruity delight!  And for extra deliciousness, drizzle in any remaining cooking fat from the breakfast skillet.  Yum!

Zone Block Totals: Fat: 6  Protein: 4  Carbohydrate: 3  with GIs all under 50 and GLs all under 10 (for those that are known, and from what we have learned above, it seems reasonable to assume that the others are in this range too).  Although not perfectly Zone, it works for me for my goals since I am trying to go low-carb and fuel myself on fat!
My results: no hunger for 5 hours, superb concentration and focus, high energy, clear head, motivation, and most importantly: happiness!
